CHIMAB Lectio Magistralis at the University of Padua

CHIMAB will give a special a Lectio Magistralis at the University of Padua - Agripolis; the lecture is intended for the students of the “Applied Enzymology” course of the Master Degree in Food Science and Technology and for all students and teachers concerned.

Pierangelo Fedeli, Baking & Confectionery Business Unit Manager, will explain the different types of baking enzymes. In depth, he will show their functionality in baked goods, with the leavening agents or natural yeasts (i.e. for  different cake’s doughs)

During the lesson, Mr. Fedeli will clarify the different functionality of enzymes for flour treatment and for flour rheology in milling industry.
